Chocolate Coconut Mudcake

How to Bake A Coconut Mud Cake

2 3/4 cups of plain flour
1/2 cup of cocoa powder
1.5 cups of caster sugar
1/2 cup of oil
1 cup of milk
1 cup of hot water
2 cracked eggs
2 tbsp vanilla essence
2 tspn baking powder
1/2 cup of dark chocolate pieces
3/4 cup of coconut flakes

Decoration.

1 cup of coconut flakes.

Coconut Mud cake cooking instructions

Mix 1 3/4 cups of plain flour (sift it), 1/2 cup of cocoa powder, 1.5 cup of caster sugar, 1 cup of milk, 2 eggs, 1 cup of hot water, 2 tbsp of vanilla essence, 2 tspn baking powder, 1/2 cup of dark chocolate pieces together using a mixer. This batter will be very runny. Pour 1 cup of this batter and put aside for later. 

In the remaining batter, mix in 1 cup of plain flour (sift it) and 3/4 cup of coconut flakes using a mixer on high speed.

Pour into the baking tray and bake at 150 degrees for 25 min. Take the sponge cake out. Take it out of the baking tray. It will fall apart in the middle since it is not finished baking. Pick it back up and put back into the baking tray. Pour the 1 cup of batter you put aside over the sponge cake. Put it back into the oven on 180 degrees for 20 minutes. Turn off the oven and take out the cake. Decorate with coconut flakes. Use around 1 cup of coconut flakes. Put it back into the oven and let it sit in the oven while the oven cools down. This will melt some of the coconut flakes.
